How to cook otong soup – Okra soup in Efik style

Otong soup also known as okra soup is one of Nigeria’s most delicious delicacies. It is called otong soup by the people of Efik. They prepare this soup using ugwu leaves and uziza leaves as part of the ingredients. Below are the recipes and steps in making this delicious delicacy


  • 25 fingers of okra (chopped)
  • 1 pound of beef
  • 1 cup of snails (optional)
  • 1 cup of shrimps
  • 1 cup of tripe (shaki)
  • 1 bunch of ugwu (chopped)
  • 1 handful of uziza leaves (chopped)
  • Stock fish
  • 1/2 cup of crayfish
  • Seasoning cubes
  • 1 scotch bonnet pepper (chopped)
  • 2 cooking spoons of palm oil
  • Salt

Preparation method

  • Wash, season, and boil the beef, shaki, snail, and stock fish till tender
  • Add the shrimps to the pot containing beef and allow to cook. Add little water as needed
  • Add your chopped pepper and crayfish, and allow to simmer for 2 minutes
  • Add your seasoning cube and salt. Then pour in the okra, add the chopped vegetables and oil. Stir and take off the heat. Do not cover the pot once you add the okra, so that it can still draw. Serve with any choice of swallow.
