How to Cook Omi Ukpoka (Corn Soup)

Omi ukpoka is a delicious soup of the people of Edo state. It has a unique aroma. The various spices added to this soup gives it that unique aroma. It’s texture looks like the light egusi soup or ofe nsala, mostly served with pounded yam, eba, fufu, or any choice of swallow. Below are the ingredients and method of making this meal.

Ingredients:

  • Beef
  • Smoked prawns
  • Smoked fish
  • Palm oil
  • Finely ground corn
  • Uziza
  • Ground nutmeg
  • Uda (deseeded and crushed)
  • Pepper
  • Seasoning cube
  • Salt

Preparation method

  • Wash, season the meats with the needed ingredients, and steam till cooked.
  • Add the smoked fish, shrimp, spices, and oil. Add more water and allow to boil for 5 minutes.
  • Reduce the heat and stir in the corn grit and mix quickly as you add the corn so that lumps do not form. Cook for 5-10 minutes for the soup to thicken.
  • Add the uziza┬áleaves and cook for 1 minute.

Your soup is ready. Serve with any choice of swallow.
