How to cook coconut rice

Ingredients:

  • Rice
  • Homemade coconut milk
  • Chicken or beef stock
  • Ground crayfish
  • Diced onion
  • Vegetable oil or coconut oil
  • Seasoning cubes
  • Salt to taste
  • Fresh pepper and tomatoes
  • Green peas

Preparation method

  • Wash the rice thoroughly and keep aside in a bowl
  • Heat the oil in a pot, then add the diced onions, pepper, tomatoes, and ground crayfish, then fry for about 2mins (the onions should not turn brown)
  • Add the chicken or beef stock, then add the coconut milk, green peas, seasoning cubes, and salt to the fried onions, pepper, tomatoes, and crayfish. Then allow boiling
  • When the sauce starts boiling, add the rice and cover the pot. Allow cooking until the rice is well cooked (make sure you check the rice always to ensure it does not burn ¬†and add extra stock if need be)
  • Once the rice is done, put off the heat and bring it down. Serve with chicken, turkey, or beef
